Every day, with the precision of a goldsmith, Donatien Fehr, drawing on his experience in prestigious houses around the world, creates exceptional éclairs.
Each of our creations is a unique work, a dance of ephemeral flavors orchestrated by Donatien Himself. A sweet and salty symphony that evolves with the seasons, capturing the quintessence of what nature offers best.
Our ingredients are carefully chosen for their freshness, because at Donatien, every bite is a promise of delight.
The team
Born in a family environment conducive to entrepreneurship, the Donatien Maître Eclair pastry shop is above all a family story.
Donatien Fehr
Originally from Bas-Rhin, Donatien attended the hotel and tourism school in Strasbourg.
He then went to the one in La Rochelle for his “dessert plate” specialization. He worked while traveling: in Paris (including two years at Ladurée), at the Ritz in London, in Australia, then on luxury yachts as a pastry chef. While he was in Japan, the pandemic forced him to return to Strasbourg. As soon as he returned from Asia, Donatien started looking for premises in the center of Strasbourg. His concept was simple and effective: to offer savory and sweet éclairs.
His favorite éclair is the caramel chouchou, his all-time “favorite”…
Eloise Fehr
After studying business and gaining extensive professional experience both in France and abroad, Eloïse collaborated with her older brother to create the patisserie's point of sale. Today, she manages the administrative side and the prospecting of professional partnerships for the store. Since eco-responsibility is a value that is close to her heart, she promotes short circuits and zero waste for the store. Full of energy and always ready to take on challenges, she is at the heart of all the company's activity.

The pastry chef team
Florian joined the production team in October 2022. He quickly made his mark and proved himself in our laboratory and is a great teacher for our new recruits. His know-how and techniques are always good to take!
His favorite éclair is peach verbena.
Guillaume will dazzle you with his creations, each as artistic as the next. Passionate about our single-product concept, he works every day with the goal of delighting you with new flavors.
His favorite éclair is the speculoos tiramisu.
Théo comes from Loire-Atlantique and joined our team for his first experience in pastry making! He was able to adapt both to life in Strasbourg by taking up cycling, among other things, and to the world of pastry making, which he already knew very well. He also has knowledge of chocolate making, which is a plus!
His favorite éclair is the Ispahan.
Emma is our latest recruit in pastry! She was previously a communications student for Donatien Maître Eclair and her love for pastry led her to join the laboratory alongside her CAP. We wish her good luck in this new adventure!
Her favorite éclair is vanilla pecan.
The sales team
Meet Kim, our sales manager! After working in the laboratory alongside the pastry team, she joined the sales team to share her know-how and expertise. Also concerned by ecological and societal causes, Kim will not hesitate to take anti-waste and associative actions. Dynamic and enthusiastic, she will be able to lead the sales team and bring some pep to Donatien Maître Éclair.
His favorite éclair is the exotic coconut one.
Kevin, young and invested, will be very happy to meet you in store to chat with you and even offer you a little tasting. He likes customer relations and will know how to advise you best! Moreover, it is also Kevin who will give you news by email if you subscribe to our Newsletter.

Our suppliers
We have a real desire to select quality products that correspond to our values. The choux pastry, for example, which is the basis of all our small cakes, must be impeccable. We therefore work exclusively with organic flour from the Moulin des Moines. All our dairy products such as butter, milk and cream come from local farms thanks to our supplier Alsace Lait. Another example is our basic ingredient for the classic vanilla éclair: the fair trade pod from Nosy Komba. It is harvested in the Akiba eco-village in Madagascar using entirely natural traditional processes where the income directly benefits the locals.
As our region is full of fabulous products, we have set ourselves the goal of making you discover them through our éclairs: honey, saffron, rose and so many others… And all while respecting the rhythm of the seasons as much as possible.
Our partners
Always in an ecological approach, we try as much as possible to adopt initiatives to reduce our ecological impact. Our food waste is collected by the Sikle organization by cargo bike in order to reuse it for bio-compost. We offer our possible unsold items on the Too Good To Go application in order to reduce waste. We are also part of the Zero Waste Strasbourg network. This means that you can bring your own containers, and you will even be entitled to a 10% discount!
